I am loving these as my new favourite coffee/tea time snacks that are nice and light, easy to share, and satisfy that “pastry” type of craving.
Plus 1 tsp sweetener to dust
Combine dry ingredients in a medium bowl. Melt butter in microwave for 20-25 seconds and add to dry ingredients. Stir to combine. Add egg and stir to make dough. Roll teaspoon-sized portions out to straw shapes about 4-inches long and bake on parchment lined cookie sheet in a preheated oven at 350 degrees Fahrenheit 10-15 minutes. Dust with extra sweetener for prettiness.
Yields 14-20 straws. Less than 1 net carb per straw.
I used to eat biscotti in my pre-low carb days, so this is a nice treat to have dipped in my coffee con panna (served with whipped cream).
